So we have two good restaurants in town. And by restaurants I mean real local places, not Burger King or Wendys and certainly not Taco Bell. One is a delicious Italian restaurant called Mama’s Pizza, which is just fantastic. Their eggplant parmigiana is to die for. The other great place to eat around here is an all natural cafe called Mango Bistro. The food is clean, light yet filling, and healthy. And it is succulent and yummy, and when you have eaten everything that you can eat, and you’ve downed your delicious real fruit smoothie, you don’t feel nasty and stuffed. You just feel fulfilled. I love it very much, but I don’t have the money to eat there everyday. Or even most days.
So, after dining there twice with Emilee last week, she picked up a magazine with some great food ideas. The first one that stood out to us was cucumbers with hummus. I would have never thought of combining the two! And it’s so yummy. The cucumbers do need a dash of salt, though, I think. The other great idea was grilled cheese with pesto and tomato, and another with avocado and bacon.
Brilliance.
Seriously, we tried both kinds yesterday. We put gouda on the one with pesto and tomato, and I don’t know if I’ve ever enjoyed a sandwich quite so much. We used white american on both pieces of bread and put the avocado and bacon in the middle. That was more filling (more cheese and avocado is more substantial than tomato), and way delicious. So delicious, in fact, that we did the very same lunch date today. And tomorrow, I’m going to my parent’s house to convert them into loving those wonderful little sandwiches.
You have to try it. You will not be sorry.
